Cinnamon Cookies

You will need:

2 cups all-purpose flour

1 cup sugar

1/2 cup butter/margarine softened

3 eggs

2 tbsp milk

2 tsp ground cinnamon

1/2 tsp double acting baking powder or 1 tsp regular baking powder

1/2 tsp salt{{more}}

Method:

In a large bowl, mix all ingredients together with a mixer at medium speed for about three minutes, occasionally scraping bowl.

Wrap the dough in plastic wrap, then put it in the refrigerator for 2 1/2hrs or until easy to handle. With lightly floured rolling pin, directly onto cold cookie sheet, roll half of dough to 1/8” thickness. Keep remaining dough refrigerated or use if desired.

With floured cookie cutter, cut cookies, spacing 1” apart. Chill about one hour, then remove dough from between cookies. Meanwhile, preheat oven to 350 degrees.

Bake 15 minutes or until lightly browned. Immediately remove cookies to wire racks, cool. Repeat with remaining dough and trimmings.

Tip – If you are in a pinch for time, simply use the dough soft and spoon it onto a cookie sheet and bake.
