Seafood Dipping Sauce

You will need:
3 sticks unsalted butter
3 tbsp garlic minced
1/ 4 cup onion diced
1/ 2 tbsp ginger minced
2 tbsp fish seasoning / Old Bay Seasoning
1 tbsp oregano
1/ 2 tbsp paprika
1/ 2 tbsp chilli powder
1 tsp red pepper flakes
1 tsp black pepper
1/ 2 slice of lemon
1/ 2 cup chicken broth
1 1/ 2 tbsp brown sugar

Method:
Melt the butter in a medium skillet over medium heat. Once melted, add the garlic, onion, ginger and cook 2-3 minutes or until fragrant. Add the old bay/fish seasoning, brown sugar, paprika, pepper flakes, chili powder, and oregano. Allow to cook for 3-4 minutes. Add the chicken broth and bring to a boil over medium-high heat. Then reduce the heat, and simmer for 20 minutes.
Remove from the heat and stir in the lemon juice. Season with salt and pepper, to taste. Pour the sauce over your favourite seafood, boil or serve it as a dipping sauce.
Tip: A reminder that broth can be made with 1 cup water and 1 large Maggi Cube.
