Spinach Garlic Meatballs stuffed with Mozzarella

You will need:

1 pound ground beef

1/ 2 cup breadcrumbs (Italian Breadcrumbs can be used as well)

1/ 4 cup grated Parmesan cheese

2 cloves garlic, minced

2 tablespoons green seasoning

1/ 2 cup frozen spinach, thawed and drained

1/ 2 teaspoon salt

1/ 4 teaspoon black pepper

4 ounces mozzarella cheese, cut into small cubes

2 tablespoons oil

1 cup marinara or pasta sauce

Method:

In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, minced garlic, thawed spinach, salt, black pepper and green seasoning. Mix well until all the ingredients are evenly incorporated. Take a small portion of the meat mixture and flatten it in the palm of your hand. Place a cube of mozzarella cheese in the centre and shape the meat mixture into a ball, ensuring the cheese is completely enclosed. Repeat with the remaining meat mixture and cheese.

Heat oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides, turning occasionally to ensure even cooking. Pour the marinara or pasta sauce into the skillet with the meatballs. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the meatballs are cooked through and the sauce is heated.

Remove from heat and let the meatballs rest for a few minutes before serving.
