Potato and meat puffs

Here is another very easy creative way to use potatoes.
You will need:

3 medium to large potatoes (cubes)
60 grams of Ham (or luncheon meat) cut into small pieces
Salt
1 egg
Chives to taste
Table spoon of butter
3 tbsp oil
3 tbsp corn starch
Pinch of black pepper (optional)
Oil for frying

Method:
Put the potatoes in a pot with water and a pinch of salt, cover and let cook for 15 minutes or until soft. Drain the potatoes when finished and place in a bowl. Mash with fork or masher. Add salt to taste. Add egg, ham, chives, butter, oil, cornstarch, black pepper and stir to combine. Spoon batter into a piping bag and once filled, cut the tip to give about a half inch hole.
In a frying pan add enough oil to cover the puffs you will be creating. Squeeze the mixture through the piping bag and cut the batter when about 2 inches have piped out into the oil. If your bag hole isn’t big enough then cut it larger, its fine. Fry until golden brown on the outside then let cool and enjoy by themselves or with a dipping sauce.
