Curry Goat

THERE ARE FEW things more enjoyable than a good curry goat. However, not everyone knows how to do it. Follow this recipe and you will have it down locked for sure.

You will need:

1 pound Boneless goat meat
1 tbsp Vinegar
1 large Potato
Cooking oil
2 Onions
1 tbsp Tomato paste
1 tsp grated ginger
1 small head Garlic
1 large green pepper
2 tbsp curry powder
2 tsp pepper sauce or 1 hot pepper (optional)
2 Pimento peppers or flavor peppers
1/2 cube Maggi cube
2 Leaves Thyme A few leaves of Chives
1 tsp Salt to taste

Method:

Start by cutting up your meat then washing it off and rinsing once with a vinegar wash, and then pat dry. Place your goat meat in a medium size pot and add in your salt, turn up the heat and sauté the goat meat till lightly browned. Add in your curry and stir, then add in your onion, tomato paste, thyme, garlic, ginger, chives, pepper and pepper sauce or 1 whole pepper and stir for 3-4 minutes till combined. Pour in enough water to cover the meat and bring to a boil, cover and turn down to a simmer and cook till tender roughly 2 hours. Once the goat is fork tender, add in your diced potatoes, maggi cube and more water if needed and cook till the

potatoes are fork tender. Add as much water as you want to serve with, it soaks up fast so keep an eye on it. Enjoy!

Tips: I normally use some Adobo all-purpose seasoning and omit the salt as that has salt as well. Sometimes I will combine everything together, except the potato, into a pressure cooker and that cuts down the time. Once it’s close to finish then I add the potatoes and let cook opened.
