Chicken avocado burritos

I love on the go meals and this dish is great for someone who doesn’t have time to sit at the table.

You will need:

2 cups cooked chicken breast or

thighs cut into strips

1 cup grated cheese (mozzarella or

mild cheddar cheese)

1 avocado – diced

2 tbsp cilantro – chopped

4 large tortillas

4 tbsp sour cream

1 tbsp olive oil{{more}}


Heat 1 tbsp olive oil in a frying pan; put in chicken breast (lightly seasoned) and cook for about 5 minutes on each side. Spread 1 tablespoon mustard over the chicken, add about 1/4 cup water and cook covered for a few more minutes (optional). Cut cooked chicken into thin strips. Mix the chicken, grated cheese, cilantro, add the diced avocados. Spread 1 tbsp sour cream on each tortilla, add 1/4 of the mixture, form a roll. Heat 1 tbsp olive oil into a pan and place all four tortillas on the pan; cook for 2 minutes on medium – high heat. Flip on the other side and cook for another 2 minutes or until the tortillas are golden. Serve warm, or wrap it and go.

Tip – Add whatever extra vegetables you may like (onions, tomatoes). Tortillas/wraps are sold at almost all major supermarkets.
