White Christmas Mojito
You will need: 3/ 4 cup lime juice 1/ 4 cup packed mint leaves plus extra for garnish 1/ 2 cup sugar 1/ 2 cup white rum 1/ 2 cup coconut rum 1 cup canned coconut milk Sparkling water Pomegranate arils (seeds)
Method:
In a large pitcher, muddle the mint leaves with sugar and lime juice to release the flavours.
(Optional: Strain out the mint leaves for a smoother drink.) Fill four glasses halfway with ice, then pour the coconut rum mixture until each glass is about 3/ 4 full. Fill each glass with sparkling water, garnish with mint and pomegranate arils, and enjoy!
Tip: A muddle is a what is basically a crushing devise. It can be used in a cup or glass to crush the mint leaves.You can use anything that allows you to crust the leaves
Jack Frost Mimosa
You will need: 1.5 oz vodka 1 oz blue curaçao 1 oz cream of coconut 2 oz pineapple juice Shredded coconut for rim Ice (handful) Pineapple wedge optional garnish Maraschino cherry optional garnish Method:
Spread shredded coconut on a small plate. Dip the rim of a glass into water or pineapple juice, then press it into the shredded coconut to coat the rim. In a blender, combine vodka, blue curaçao, cream of coconut, and pineapple juice. Add a handful of ice and blend until smooth and slushy.
Pour the blended mixture into the prepared glass. Garnish with a pineapple
wedge and a maraschino cherry for a festive touch. Serve immediately and enjoy your frosty, tropical cocktail!
