Pork Chow Mein

Pork Chow Mein

Change up your regular chow mein with some pork and enjoy.

You will need:

2 packages Chow Mein Noodles

2 tbsp oil

 
Pork Marinade:

1/2 to 1lb pork, thinly sliced

2 tbsp soy sauce

1 tbsp brown sugar

2 tbsp rice wine vinegar

1 tbsp hot sauce (optional){{more}}

Sauce:

4 tsp soy sauce

2 tbsp rice wine vinegar

2 tbsp brown sugar

2 tbsp oil

Stir Fry:

2 tbsp oil

2 cloves garlic

1 tsp minced ginger

8 oz mushrooms (drained)

Sliced carrots, cabbage, onions and pepper.

Method.

In a small bowl, whisk together the marinade ingredients and add pork slices. Refrigerate while preparing the noodles. Prepare noodles as directed on package, making sure to drain and rinse with cold water. Place noodles back into the pot and toss well with oil; set aside. In a small bowl, whisk together the sauce ingredients; set aside. Drain off marinade from the pork. Heat a wok or large skillet over high heat until very hot. Add oil, swirling to coat. Add pork and stir-fry for about 3 to 4 minutes. Remove meat to a clean plate; set aside. Add oil again; add the sliced mushrooms, onions, pepper and vegetables and stir-fry for about 2 minutes. Add ingredients for sauce and continue stir-frying until vegetables are cooked, but not soggy; make sure not to burn. Add in the noodles and pork and toss occasionally about 2 minutes. Serve immediately.

Tip – Substitute chow mein noodles with any pasta.
